■Sashimi: 6 pieces of seasonal fish (wasabi, shiso, lemon, cherry tomato, sliced onion, myoga ginger, cracked shellfish, mandarin orange)

■Simmered dish: Sakura sea bream in a small pot with delicious dashi broth (spring cabbage, new onion, mizuna, and carrot garnish)

■Specialty: Bluefin tuna medium fatty tuna dressed in torozawa sauce with sea urchin (Hokkaido sea urchin, sliced onions, wasabi)

Tempura: large shrimp, smelt, and new lotus root (with five-color salt)

■Meat dish: Wagyu beef sirloin grilled in sukiyaki style

(Cherry tomatoes, lemon, wasabi, fried garlic, red egg, homemade potato salad)

Soup dish: Clear clear wild flounder (with green onions)
